Well I'm at the 27 day mark of my NY strip and I'm at 18%. I saw some posts about how people benchmark their aging process. So, is the main factor here the aging time or weight loss? Should I be aiming for a certain weight loss percentage like 21% or a specific period of time in the bag?

Ivan - I think you might be referring to me in some of my previous posts...I always keep track of the weight loss...but I have never used that as a guage of when to stop aging. I'm MORE in the thinking that I do not like to handle my aging meat for fear of breaking the bond of the Drybag with the meat. Let it be - and measure afterward, but not during...now if I can just set those lyrics to a tune... :laugh:

I couldn't resist measuring again. 19.6% loss so far. Day 32. I did it for science!

sounds about right...my longest NY strip loin has been 35 days and it lost 21.4%.
