When making Prosciutto do I remove the pork skin from the ham before the cure? There was no mention of what to do with it in the video.

Yes you want to remove the skin , I would leave as much of the nice fat as you can and trim the stringy fat and any silver skin, you might want to keep an eye out for any arteries or blood clots. Good luck,mine turned out quite well,it dried for about 11 weeks. I'm planing on another in a few weeks as soon as my Coppa's are done and I have some room in the fridge.
