Hi, I´m new to dry aging and just bought my first charcuterie kit a month ago and made some cured lomo that turned out great, but I was wondering if I can make dry sausage in the charcuterie bags or is it a different technology? some orientation would be greatly appreciated.

Hello Chef,

You can use the Charcuterie bags to make dry sausage, it is the same material. You can shape the bags into sausage casings if you wish by heat sealing them. BTW, We recommend using large grinding plate when you make dry sausage for the first time, it will dry a bit faster and more evenly. Please see our newest video on Finocchiona.
