After your salumi is done do you remove from the dry bag and repack or just leave it in refer until consumed?

Hello Mike,

After the sausage is done to your liking, you can remove it from UMAi Dry and wrap it in parchment paper and store it in the fridge that way. If you leave it in UMAi Dry it will continue to lose moisture and get harder.

So if you Vacuum Seal will it still continue to dry also or is that another option.

Yes you can take out of the Umai bag and seal the salami in a regular vac bag.

BagLady also has ya covered.
