Let me run this by you.

I have a hot smoked pepperoni recipe thats easy peezy. Wonder if i added some bactoferm and dextrose i could put in UMAI salumi bags?


Whats your thoughts.

Sorry i have not been around much, pretty busy and still messing with ulcer.

We are full time RV'rs. 40' 5th wheel.

Hey Rick,

How do you plan to smoke it?
We used some powdered smoke in a recipe recently and waiting to see how it tastes.

Dont think i'm going to smoke this, more like just traditional process, I may try some smoked salt on half the batch
