First Attempt - Advice request was created by FraserP
This is my first attempt at dry aging steak. I have a 9lb sirloin currently in the fridge for the last 28 days.

Looking at the instructional videos and others on You Tube, those packs of meat appear to be much darker at a similar time stage. The surface is relatively firm so I'm tempted to cut into it today.

Any advice?

FraserP- first of all welcome aboard! Personally I see nothing to be concerned about. A sirloin is a thick-bodied cut of beef and 28 days is rather short. You will be fine! Enjoy your aging efforts! Ron
