Gray fat

Gray fat was created by Jmb3xb
I sealed my prime rib roast a week ago, and it was looking good and the seal was good. I check it today and the fat has started to turn gray and I was wondering if I should be worried? I did a deer roast previously and it turned out great with no noticeable graying.
