Hi everyone,

Just got myself the artisan kit and thought I would start with the duck prosciutto recipe that comes with the kit and is posted on the website. After one day in the fridge there is quite a bit of excess liquid in my glass pyrex container with my duck breast. Should I be pouring out this liquid or leaving?

You can leave the liquid in there as it has the salt in it also. After curing period pour it out before putting into UMAi Dry® bag.
