Drying meat while on vacation was created by yberger
Hello,

I am thinking to dry meat while staying outside of the house for three weeks. I am a bit concerned about too low humidity in the fridge because no one will open it for three weeks. Anyone has any experience with such a long time without opening fridge? I am thinking to leave a container with water to keep humidity higer to prevent drying.

Welcome aboard!

If your refrigerator is in proper working order you should have no concern that the door won't be opened and closed. Dry aging is the removal of the tasteless water within the meat. I would NOT leave a container of water inside. Except for any dairy product or fresh fruit both which should be removed there should be no issue. Ron
