Blood in striploin after 40days was created by aussiecal
I have done whole prime ribs in the past and they darken up and there is no blood I just did a striploin and after 40days i cut it into steaks and there was blood that ran out of the meat and the meat doesnt look as dark as the prime ribs i have done Is this ok?

That is not sounding good at all. I suspect that the refrigerator you used was either not working properly or wasn't a frost free unit to wick off the moisture being extracted during the 40 days. Can you describe unit you used?

Its a new full size whirlpool fridge i got to use as a beer fridge and extra space for when i have parties I did forget to put it on a wire rack for the first 4 or 5 days and it just sat on the glass shelf could this have done something Maybe the fridge is set too cold It does seem colder than my kitchen fridge and thats the one i have always used in the past
