Cryo vac use by date was created by Gh
I bought a 6 pound boneless rib roast on January 5 2019 and froze it immediately. Now my question is ive had the roast in the bottom drawer of my refrigerator for 7 days now at under 40 degrees is this going to be safe to feed to family and friends? It took almost 3 days to thaw out and the feeeze by use by date was jan 8th and I plan on smoking it tomorrow

I assume it was and still is sealed in the cryo vac so you should be fine.

The "use by" date is applied by the outlet that sold it to you. Your freezing and thawing at a temp consistently below 40F should keep you within common sense food safety recommendations.
Ultimately, Trust your nose. We can't smell it, so we can't help you determine whether it is safe, or not.

I opened the bag this morning and had the normal cry vac aroma, washed the roast gently and let rest uncovered in fridge and smell was completely gone in less than 10 minutes. Thank you guys for the quick responses
