Air on the end of my striploin

Air on the end of my striploin was created by RaphL
So, like about everyone on this forum, I am new and looking for advice!

I bagged my 7.2kg striploin a week ago, it had some air but not as much as it has today, I tried making a small hole and sucking air with a straw, tasted and smelled fine but air cameback after a few minutes, the problem is probably the seal.

I'm thinking about just leaving it alone and maybe opening it at 28 days instead of 36 (having people over in the 29th!)... toughts ?

Hey so here's a bit of an update, some sort of mold seems to be developping from that area, I've read on other posts that it should be fine, had anyone here experienced that?

That would not worry me! Besides you will do a slight trim which will cut that off anyway! Relax!

Meat unless punctured by a blade tenderizer by some retailers or by use of a JACCARD at home is sterile inside. Surface mold is strictly that ...on the surface so trimming at completion should suffice. Now OTOH excessive mold growth can indicate the meat has gone bad. Again - the nose will be your guide.
