Still no Salumi dedicated category

Haven't been around for awhile but I have a new job working at a real old-fashioned meat market...the one I've been getting most of my meat for dry-age beef & dry-cure sausage for the last 5 years or so. Walk in and get anything you want custom cut including USDA Prime graded beef. New job has me motivated to get back into sausage making.

Anyway...Why is there no category dedicated to dry-cure Salumi? Everything here is dedicated to beef. I find Salumi threads everywhere under dry-aging categories. I've been searching the drybagsteak.com site just looking for the instructions for the UMAI Salumi bags(casings} and can't find it (Yes I know the casings come with instructions but they are at a different location right now).

anyway...Just a suggestion. Heck...I'd even volunteer to help moderate that category. I suggested this once before but got a confusing answer. I've been making sausage for about 25 years.
