Wiped my meat by mistake was created by Shichung
This is my first time trying the umai dry bag. I spent a pretty penny on a USDA Prime ribeye roast from Costco. I got a little too excited to try this new toy and I skipped the instructions. Unbeknownst to me, I wiped down my meat like a rookie. Now I'm reading through all these posts and feel like a fool. Is there any chance that things will still turn out okay? It seems like I have a pretty good seal on it as of right now (it's still day one). Should I cut my losses and try with a different piece of meat? I would hate for this ribeye roast to go to waste.

You should be fine, though without the surface moisture the bag may take longer to adhere to the meat. Ron

I had a recent aging (related thread somewhere) about buying from grocery store in styrofoam tray and saran-type wrap...was pretty much dry as a bone when I put it in the dry-bag....Came out fine.
