Hi All,
Newbie here...so Im two days in on a new York strip sirlion and I think things are ok. It looks like there is bonding starting everywhere (more or less) EXCEPT in the front of the strip sirloin where the seal is not soo good. In that spot itlt looks loose and little bonding. I don't think it is a broken seal or there is a hole, because the whole bag would be loose (right?). But should I think about doing a reseal on it??? Thanks

Definitely don’t rebag. You can hit it with another heat seal if you think there’s a gap, but you’re better off just leaving it. The bond that is slowly forming g between meat surface and UMAi Dry® membrane is the trick—not the vacuum.
