Hello,

I'm 15 days into aging a big 6kg striploin. Someone moved it around in the fridge and slightly pierced the bag. The vacuum seal is gone. Much of the bag is still sealed to the meat, as you can see in the photo, but the one end, the vacuum is definitely gone, and no longer sealed to the meat at all. It's sitting in a nearly empty commercial fridge with a big fan.

Should I strip the current bag off, and put it in a new one, and vacuum seal it? OR - will it be OK to just leave alone. I tried folding up the loose part of the bag underneath.

I just don't want the meat to go bad and waste the $$$

Already at 15 days your bark is looking fine! I would try to fold that end over like you said - as I agree - there is no need to re-bag it!

Hi Ron,

Thanks for your quick reply.

One follow up question: Would it be bad for me to put it in a new bag for the final 2 weeks? I don't mind using an extra bag, as this is my first go at this. I would much rather waste an extra bag than waste the striploin. The current Umai bag is bonded to most of the meat on the flat sides, and only "unbonded" on the 2 ends.

No - that is neither necessary nor smart to do. The meat has already dried and therefore placing it in a new bag just means the new UMAi Dry® bag would not adhere to that meat. You'll be fine - just relax!
