Hi!
I have a crisis over here. I have been dry-aging a €100 USDA Prima Ribeye. All went good except when i saw the seal changing 2 days ago.
When i checked the meat today it had some white mold forming and the seal was open..

What do i do now? Is it a wasted €100 or can i still save it?

At 3 weeks into the meat has bonded with the UMAi Dry® bag as well as it could. I would just press any air out without disturbing the bag where it is bonded and then tape it shut. That white mold is on the surface and can be easily trimmed off after the aging has finished. And lastly...relax!
