Just wanted to know if you tweek the recipe from 5lbs to 3lbs, will the taste be the same? I really dont want to eat the sausage etc for ever!! Umai works great for the 5 lbs...

I see no reason you can't store it in a vacuumed down Food Saver bag and freeze it. You might even want to break it down to several FS bags and that way you won't have to thaw it all at once.

You can make a batch of sausage in any volume you want. Most folks find 5 lb too little for all the trouble, but the math (and the premixed salts and spices we offer) have made it our target weight.
Since it looks like you are more than able to do the math for the 3% kosher salt and the 0.25% Instacure #2, any size batch is fine.
