I started the process about 5.5 weeks ago.

Trimmed muscle off pork butt and vac sealed in fridge with spices and cure. Let it sit for 2 weeks. Removed and washed off seasoning then applied some chipotle spices and vac sealed in UMAI bag. Weight after placing in UMAI bag was 1374gr. 3.5 weeks later it is only at 1040gr and has been there for last 4 days.

Any idea what issue may be if any? Also noticed some dark spots on one side of the meat. Any help would be appreciated.
