and what meat and salt ratio they used

We always recommend a 3% kosher salt and 0.25% Instacure #2 (slow acting curing salt) ratio to weight of meat.
You may want to refer to the excellent resource meats and sausages.com or the Facebook UMAi® Salumi, Charcuterie and Dry Aged Beef closed group for more wisdom.
